The countdown is on - we are headed to California next month and we are thrilled! We are leaving the day after tax day, which is going to be so nice for Ian after a hard busy season. I really wanted to start non-busy season off on the right foot, so I made sure to plan our entire trip around food, wine, and relaxation (just like most of our previous trips). How can you go wrong with that?! Vacationing like we do is a blast because we have zero cares in the world, but it also means that we tend to gain a little weight while we are on vacation, so I try my best to plan in advance and eat healthy, workout, and really try to get in better shape in general before our trips, so that we can limit the weight gain.

In the past, I have really struggled with this because I just love food so much. But, over the years, Ian and I have learned to tweak recipes just a bit to make them healthier, so we still get to eat everything that we love. One of the ways that we have tweaked some of our recipes lately is by using Armour Premium All-Natural Lard as a healthy substitute for margarine and oils. I know what you are thinking... LARD?! I get that it is an ugly word, but hear me out.

Lard is one of the healthiest cooking fats that you will find. It contains monounsaturated fats, which are said to lower LDL cholesterol and it is even a better source of those fats compared to butter, corn, and even coconut oil. It also has less saturated fat than butter and no trans-fat like shortening. Armour Premium All-Natural Lard is gluten free, natural, sustainable, and easy to use and on top of that, it is also flavorless, so it won't change the taste of your ingredients. I bet you didn't know those facts! To be completely honest with you, I didn't know about them either before I found Armour Premium All-Natural Lard in the baking aisle at my local Walmart, but I am so glad that I found it and started cooking with it.

Another way I have been tweaking my recipes is by sneaking vegetables in. Peas in mac and cheese, spinach in smoothies, and avocado in brownies are a few of my go-to's, but today, I really want to share with you an awesome recipe that Ian and I created a few days ago... Broccoli Cheddar Latkes!

A traditional latke recipe is basically shredded potatoes that are formed into patties and fried in oil. To make this recipe healthier, we decided to sneak in some vegetables and substitute the oil for Armour Premium All-Natural Lard. While these are not kosher, they are definitely healthier than a traditional latkes and they were so good. I cannot wait to make some more soon! Broccoli Cheddar Latke Recipe

Ingredients:
  • 3 potatoes
  • 1 small head of broccoli
  • 1 small yellow onion
  • 1 cup cheddar cheese
  • 1 egg
  • 1/4 cup flour
  • A dash of garlic powder
  • Salt + pepper
  • 2 tablespoons Armour Premium All-Natural Lard

Instructions:
  • Shred your cheese, potatoes, and broccoli (including the stems) into a bowl. 
  • Cut your onion into quarters and then thinly slice the quarters. Toss them into your bowl.
  • Add your egg, flour, garlic powder, and salt + pepper to the bowl. Stir everything together.
  • Melt your lard on medium high and scoop your mixture into the pan, forming small dollops. 
  • Flatten your dollops out into patties and cook for 12 minutes total, flipping your patties every three minutes.
  • Once done, take them out of your pan and put them on a plate lined with a paper towel, in order to remove excess grease. Immediately sprinkle with salt, if needed.
  • Serve with a dipping sauce of choice, or by themselves.
