The snow has been falling all day, and it just makes me want to cuddle up on the couch with a big bowl of soup, a warm drink & a cozy blanket. Since I am wanting a big bowl of soup, I figured why not at least post about one?! I am not sure where I originally heard about Cauliflower Soup, but I do know that my first reaction was not a great one. I love Cauliflower, but I couldn’t imagine it as a soup. Since it only has a few ingredients, I decided to try it out anyway and I am so glad I did because I will never go back to cheesy potato soup! This soup is so healthy for you, but it tastes very similar to Potato Soup, especially when you add a big handful of cheese in there. Try it out and let me know what you think!

Cauliflower Soup


2 tbsp butter
2 tbsp flour
2 medium heads of cauliflower 
1 cup chopped onions
8 cups chicken broth
3 tbsp garlic powder
Salt and pepper to taste
Shredded cheddar cheese (optional)

Chop your onions and cauliflower. In a pot, make a roux with your butter and flour. Stir for a few minutes just enough for it all to mix in and thicken. Add all of your chicken broth, chopped onions & chopped cauliflower to your pot. Cook for about 20 minutes, or until all your vegetables are soft. Use an immersion blender, or food processor to puree all the vegetables. It should have a creamy texture just like potato soup! Add your garlic powder, salt & pepper. Serve in a bowl with cheese on top (optional). Enjoy!
