The holidays are here and that means that you’ll most likely be attending party after party for the next month straight. No matter what kind of party it is, you always need to give a hostess gift and/or dish to share with everyone! I typically go with a bottle of wine and a dish, but around the holidays I love to do something special and get creative! Food is a huge part of entertaining around the holidays because it brings people together. Cooking and sharing with your friends and family not only adds to the fun of the party, but it also highlights what this season is all about, and that is giving. Before I share with you this awesome recipe and my hostess gift craft, I want to tell you a quick story!
The other week, I was invited to my friends engagement party. It was an “I do BBQ” and everyone had to bring a dish to share! I was thrilled to bring these avocado deviled eggs because everyone always loves them. Unfortunately, as soon as I got to the engagement party, I got out of the car, reached in to pull out the deviled eggs and somehow completely messed them up. They were on the sides of the container (we didn’t have an egg tray at the time) and all of them were mushed together. I was beyond upset. Ian sat in the parking lot trying to re-arrange them so they at least looked a bit presentable.
When I thought of making these avocado deviled eggs for holiday parties, I needed to make sure that my embarrassing mess up never happened again! I explored Walmart one day and came across Rubbermaid TakeAlongs. First of all, I love Rubbermaid. I have always used them because they have been a trusted household name for over 80 years. The Rubbermaid TakeAlongs come in awesome festive holiday colors including holiday prints, red and green. They also come in a lot of different shapes and sizes, but what caught my attention was the TakeAlongs Deviled Egg Tray! I immediately grabbed the last one they had in stock and danced all the way to the checkout line. You might think that having a container that helps prevent spills would be hard to open because it would be so secure, but that is not the case at all! Thankfully, I do not have to worry about messing up my eggs anymore! Without further ado, here is the recipe and craft:
Avocado Deviled Eggs
These eggs are amazing! Make sure you are tasting this dish along the way because no matter how straight forward this recipe is, it seems like I am always altering it a bit. The colors of this dish go perfectly with this time of year - green and red is always associated with Christmas!
2 tsp olive oil
2 tsp lime juice
1/2 tsp garlic salt
2 tbsp red onion, minced.
2 tbsp cilantro, minced.
Salt to taste
1. Boil your eggs. It helps to put a splash of vinegar in the water! It makes it easier to peel the eggs.
2. Peel the eggs and then halve them length-wise.
3. Discard 2 egg yolks and put the rest of your saved yolks in a food processor (or a bowl).
4. Along with your egg yolks, add your avocado, olive oil, lime juice, garlic salt, red onion and cilantro.
5. Turn on the food processor and wait until your filling has a creamy texture. Add salt to taste.
6. When your mixture is perfect, pipe it into your egg halves.
7. Add a pinch of salt on top and then sprinkle some paprika on, as well.
8. Serve immediately, or refrigerate until ready to serve (no longer than 3 hours).
I think this is such a cute idea for a hostess gift to say thank you, or even gifts for those in need. It is pretty easy to do which makes it even better!
Step 1: Take a red piece of construction paper and press it into the top of your Rubbermaid TakeAlongs lid. Cut it out the best you can.
Step 2: Tape or glue your cut piece of paper on the top of the lid.
Step 3: Cut a green piece of paper into a Christmas tree shape. Cut some gift boxes to go below the tree and cut a star to put on top!
Step 4: Write a cute note above your image.
Step 5: Fill your gift with cookies and give to your party host, or to someone in need.
